A filling dish on its own. Serve with green vegetables such as cabbage. Good hot or cold.
Ingredients
- 4 onion peeled thinly sliced
- 4 potato large peeled thinly sliced
- 250 g 97% fat-free rindless bacon rashers sliced
- 61 g butter
- 1/2 cup plain flour
- 2 1/2 cup milk
- 60 g cheese grated
- 1 tsp nutmeg optional
- 1 pinch salt and pepper
Method

Step 1Preheat oven to 200C.

Step 2Grease a casserole dish with one teaspoon of butter.

Step 3In a medium saucepan, melt the remaining butter over low heat. Remove from the heat and stir in flour.

Step 4Return to low heat, cook gently for 1 minute and then gradually add the milk, stirring continuously until sauce thickens.

Step 5Sprinkle in half the cheese, then the nutmeg, and season. Keep warm.

Step 6Fill the greased casserole with alternating layers of onion, bacon and potato, beginning with onion and finishing with potato.

Step 7Pour over the sauce, shaking the casserole gently to distribute it evenly. Sprinkle over the remaining cheese.

Step 8Cover and bake for 1 hour.

Step 9Uncover and reduce heat to 180C. Continue baking for 1 hour or until top is golden brown and the potatoes are well cooked.
Recipe Notes
I sometimes add crushed garlic with the onion layers. I slice my potato and onion with the food processor. You can reduce the amount of onion and / or potato if desired.
