Ingredients

  • 1 sheet shortcrust pastry
  • 1 canola oil spray
  • 1 carrot grated large
  • 1 brown onion grated small
  • 4 bacon rashers finely chopped rindless
  • 310 g canned corn drained
  • 7 large egg beaten
  • 1/2 tsp salt
  • 1/2 tsp paprika
  • 1/2 tsp black pepper
  • 2 tsp parsley chopped
  • 1 1/2 cup tasty cheese shredded
  • 1 pinch paprika

Method

  • Step 1
    Lightly grease a 23 cm baking tin and line with pastry.
  • Step 2
    In a large bowl, mix everything but the eggs and extra paprika.
  • Step 3
    Add the mixture to an oil-sprayed tin and pour beaten eggs over, ensuring the egg gets to the bottom and covers all the vegetables.
  • Step 4
    Layer cheese over the top, sprinkle with paprika and bake in a medium-hot oven for about 45 minutes or until cooked through.
