Ingredients

  • 1 1/2 cups mashed potato
  • 2 egg yolks
  • 1 tbs dried parsley
  • 425g canned tuna drained
  • 1 tsp curry powder
  • 1 onion medium finely chopped
  • 1 tbs lemon juice
  • 2 egg whites *to coat
  • 1 cup breadcrumbs
  • 1 pinch salt and pepper *to taste

Method

  • Step 1
    In a large bowl, combine all ingredients except the egg whites. Place in fridge for 1 hour.

  • Step 2
    Remove from fridge. Scoop out the mixture in tablespoons and form into balls. Coat with the beaten egg whites.
  • Step 3
    Roll the balls in the breadcrumbs, flatten slightly and place on a lined baking tray. Refrigerate for 30 minutes.
  • Step 4
    Heat a large non-stick frying pan over med-high heat. Shallow fry each patty, flipping half way, until golden.
Recipe Notes

Tinned salmon can also be used.

Patties can be served with chips and salad, or for a more hearty meal, try them with steamed vegetables and rice.
