These are the best tuna patties: budget-friendly, super tasty and very easy to make.
Ingredients
- 1 1/2 cups mashed potato
- 2 egg yolks
- 1 tbs dried parsley
- 425g canned tuna drained
- 1 tsp curry powder
- 1 onion medium finely chopped
- 1 tbs lemon juice
- 2 egg whites *to coat
- 1 cup breadcrumbs
- 1 pinch salt and pepper *to taste
Method

Step 1In a large bowl, combine all ingredients except the egg whites. Place in fridge for 1 hour.

Step 2Remove from fridge. Scoop out the mixture in tablespoons and form into balls. Coat with the beaten egg whites.

Step 3Roll the balls in the breadcrumbs, flatten slightly and place on a lined baking tray. Refrigerate for 30 minutes.

Step 4Heat a large non-stick frying pan over med-high heat. Shallow fry each patty, flipping half way, until golden.
Recipe Notes
Tinned salmon can also be used.
Patties can be served with chips and salad, or for a more hearty meal, try them with steamed vegetables and rice.
