A delicious snack or at barbecues. I like them for breakfast or brunch.
Ingredients
- 6 tomatoes halved medium washed
- 2 avocados chopped peeled pitted
- 1 1/2 cups Swiss cheese grated
- 10 leaves fresh basil chopped
- 1/4 tsp dried oregano
Method

Step 1Place halves cut side up on a baking sheet.

Step 2In a small bowl, mash together avocados, cheese and basil.

Step 3Bake tomatoes at 200C for 5 minutes, or until becoming soft. Carefully remove from oven.

Step 4Spoon mashed mixture on top of hot tomatoes and sprinkle with oregano.

Step 5Serve hot.

Recipe Notes
Quick and easy, and quite healthy as long as you don't overdo the cheese. Wash tomatoes and halve cross-ways and use fresh basil leaves or 1 tablespoon dried basil.
