A fancy twist on the cheese toastie!
Ingredients
- 4 big slices of toast bread
- 2 avocados
- 150 g spicy Gorgonzola PDO
- 30 g butter
- Pink pepper
Hummus
- 220 g cooked chickpeas
- 1 tablespoon lemon juice
- 2 tablespoons evo oil
- 1/2 small garlic clove
- 1 pinch of salt
- 2 tablespoons tahini
Method

Step 1Start preparing the hummus for the toast.

Step 2In a mixer, add cooked chickpeas, lemon juice, evo oil, garlic, salt and tahina.

Step 3Start mixing and, if needed, add little water to make the hummus soft.

Step 4In a non-stick pan, melt the butter, add the bread slices once at a time and toast them on both sides.

Step 5Put a slice of bread on a serving plate, spread the hummus on the base, put the avocado slices and crumble the spicy Gorgonzola on top.

Step 6Pour a dash of evo oil and season with salt and pink pepper.

Step 7Cover with another toasted slice of bread and cut it in half.
