A tasty side dish I came up with, which is very easy to make and my husband really liked.
Ingredients
- 1 eggplant
- 2 tomato sliced
- 1 cup cheese grated *to taste
- 1 tbs white vinegar *to taste
- 1 pinch chilli powder *to taste
- 1 tbs olive oil *to taste
- 1 tsp salt and pepper
Method

Step 1Cut eggplant into rectangular slices.

Step 2Sprinkle eggplant pieces with salt and leave for about 30 minutes to allow juices to run.

Step 3Preheat grill and rinse eggplant slices well, pat dry and place in dish. Add salt, black pepper, vinegar and olive oil.

Step 4Top eggplant pieces with a tomato slice.

Step 5Grill for 15 minutes or until cheese has melted and slices have browned slightly.

Step 6Add liberal amounts of grated cheese on top of each slice and sprinkle chilli powder on top.
Recipe Notes
I serve with homemade potato wedges and oven-baked chicken which goes well together.
