Ingredients

  • 1 eggplant
  • 2 tomato sliced
  • 1 cup cheese grated *to taste
  • 1 tbs white vinegar *to taste
  • 1 pinch chilli powder *to taste
  • 1 tbs olive oil *to taste
  • 1 tsp salt and pepper

Method

  • Step 1
    Cut eggplant into rectangular slices.
  • Step 2
    Sprinkle eggplant pieces with salt and leave for about 30 minutes to allow juices to run.
  • Step 3
    Preheat grill and rinse eggplant slices well, pat dry and place in dish. Add salt, black pepper, vinegar and olive oil.
  • Step 4
    Top eggplant pieces with a tomato slice.
  • Step 5
    Grill for 15 minutes or until cheese has melted and slices have browned slightly.
  • Step 6
    Add liberal amounts of grated cheese on top of each slice and sprinkle chilli powder on top.
Recipe Notes
I serve with homemade potato wedges and oven-baked chicken which goes well together.
