This quiche is very rich and we all love it. It goes nicely with a side salad.
Ingredients
- 1 sheet shortcrust pastry
- 3 bacon rashers diced fat trimmed
- 2 onions diced small
- 125 g corn cob kernels drained
- 340 g canned asparagus drained
- 1 tsp butter
- 2 eggs lightly beaten
- 300 ml thickened cream
- 250 g cheese grated
Method

Step 1Line a greased large pie plate with pastry.

Step 2Sauté onions, bacon and corn in the melted butter.

Step 3Place in pastry base and top with asparagus.

Step 4Combine eggs and cream and grated cheese.

Step 5Pour over asparagus.

Step 6Bake at 180C for approximately 50 minutes or until a knife inserted into the centre of the quiche comes out clean.
Recipe Notes
I use John West brand asparagus and Kraft cheddar cheese (the non-refrigerated one).
Serve with a side salad.
Very nice as leftovers. Even people who do not like asparagus love this quiche.
