Apple yoghurt skillet cake

This delicious skillet cake is sweetened with apples and condensed milk, and it’s so easy to throw together, it’ll make the perfect quick afternoon tea or dessert. - Greer Worsley

Ingredients

  • 2 cups self-raising flour
  • 1 tsp ground cinnamon
  • 2 eggs
  • 125g butter, melted
  • 1/2 cup condensed milk
  • 1/2 cup plain yoghurt
  • 1/2 cup milk
  • 2 green apples, peeled, cored and diced

For apple cream:

  • 1/2 cup sweetened apple puree
  • 1/2 cup plain yoghurt

Method

  • Step 1
    Preheat oven to 180C. Grease a 25cm cast-iron skillet with butter and dust with flour.
  • Step 2
    Mix together flour and cinnamon in a large bowl. Make a well in the centre and add eggs, butter, condensed milk, yoghurt and milk. Whisk together until just combined. Fold through apples. Pour into prepared skillet and bake for 30 minutes.
  • Step 3
    Mix together apple puree and yoghurt to make a cream. Serve cake warm from the oven with a dollop of apple cream on top.
Recipe Notes
  • You can serve with ice-cream or double cream if you prefer.
  • I used green cooking apples. Granny Smiths would work well. You could use tinned apple as well.
