Ingredients

Pastry

  • 500 g plain flour
  • 125 g lard
  • 125 g butter
  • 1 egg
  • 15 ml malt vinegar
  • 25 g brown sugar
  • 1 iced water

Filling

  • 500 g apple
  • 15 ml water
  • 1 sugar *to taste
  • 1 tbs milk

Method

  • Step 1
    Filling: Peel, core and slice the apples.
  • Step 2
    Place in a saucepan with about 15ml of water, and cook, covered, for 10-15 minutes until soft.
  • Step 3
    Add sugar. Set aside to cool.
  • Step 4
    Pastry: Rub lard into flour until it looks like breadcrumbs.
  • Step 5
    Add the sugar and mix.
  • Step 6
    Beat together the egg, vinegar and water.
  • Step 7
    Add to the flour mixture, a little at a time.
  • Step 8
    Gather together with a knife until a paste is formed.
  • Step 9
    Turn onto a floured pastry board. Knead lightly. Wrap in foil or cling wrap and put in the refrigerator for about 30 minutes to chill.
  • Step 10
    Divide dough into two. Knead lightly and form it into a ball.
  • Step 11
    Roll out to about 5mm.
  • Step 12
    Line pie plate with the pastry and trim. Prick the pastry with a fork several times.
  • Step 13
    Place apples into the base. Moisten edge with a little milk.
  • Step 14
    Knead remaining pastry lightly and form into a ball.
  • Step 15
    Roll out slightly thicker than the base and cover the pie. Seal the edge of the pie and trim.
  • Step 16
    Brush with milk and sprinkle some extra sugar on top.
  • Step 17
    Bake at 175C in the centre of the oven for 30-40 minutes until golden brown and crisp.

Recipe Notes

I use soft flour for this recipe, if available.

Any sweet filling can be used with it e.g. blackberry and apple, cherry, mixed summer fruits and plum and almond.

I used white fat.

Serve hot or cold with custard, cream or ice cream.
