Meet bread and butter pudding's more exciting cousin! This apple and custard crumpet pudding transforms humble crumpets into an utterly comforting dessert that's perfect for feeding a crowd. I love how the crumpets' signature holes soak up the rich custard beautifully, while the sweet cinnamon apples add warmth and flavour throughout. It's the kind of pudding that fills your kitchen with the most wonderful aromas as it bakes, and it's simple enough for a weeknight treat yet impressive enough for entertaining. Best of all, it uses readily available ingredients and only needs 15 minutes of prep time.
How to make apple and custard crumpet pudding: key tips
- Don't skip the 30-minute soaking time – this allows the crumpets to absorb the custard mixture properly, ensuring a creamy rather than dry result.
- Spreading butter on one side of each crumpet creates lovely golden patches and adds richness to every bite.
- When you pour over the custard mixture, lightly press the crumpets down with a spoon to help them absorb the liquid, but don't squash them completely.
- Allow the pudding to cool for 15 minutes after baking; this helps it set properly and makes serving much easier.
- This recipe requires 45 minutes of standing time.
What goes into this apple and custard crumpet pudding recipe
The beauty of this pudding lies in its simplicity. Crumpets form the base – their spongy texture and distinctive holes make them perfect for soaking up the custard. Canned apple slices provide fruity sweetness and are enhanced with cinnamon sugar for that classic apple pie flavour. The custard mixture combines ready-made pouring custard with milk, eggs, vanilla, and caster sugar to create a rich, creamy base that transforms as it bakes. Butter adds richness and helps achieve that golden top, whilst chopped pistachios provide a lovely crunch and pop of colour for finishing. It's comfort food at its finest, using pantry staples to create something truly special.

Recipe Notes
How can I check that the pudding is ready?
The pudding is ready when the top is golden and the custard feels set when gently shaken. The centre might wobble slightly, but the custard will continue to set as it cools.
