This apple cinnamon cake is a very delicious and easy cake, adults and children will love it so much. - 25carina

Ingredients

4 eggs
1 tbs lemon zested
1 tsp vanilla essence
2 cups plain flour
2 tsp cinnamon sugar
1 1/2 cups sugar
3 apples medium shredded
2 carrots medium shredded
3/4 cup walnuts
1/2 cup oil
2 tsp baking powder
1/2 cup icing sugar sifted
1 tsp cinnamon sugar sifted

Method

Step 1

Mix the eggs, vanilla, zest and sugar for 6 minutes at high speed.
Step 2

Add the oil and mix for 3 minutes.
Step 3

Sift the flour, cinnamon and baking powder, and add to the egg mixture. Mix at low speed.
Step 4

Add the apple, carrots and walnuts, and mix well.
Step 5

Pour mixture into a cake pan and bake at 180C for approximately 40 minutes.
Step 6

Sift the sugar powder and ½ teaspoon of cinnamon, and sprinkle over the hot cake.
