Ingredients

  • 8 large Granny Smith apples, peeled and cut into 1cm cubes
  • 200g unsalted butter
  • 2 tbsp caster sugar
  • 1 tsp cinnamon
  • 10 slices white sandwich bread, crusts removed

Method

  • Step 1
    Preheat oven to 200℃
  • Step 2
    Place the apples, cinnamon and sugar into a bowl and toss together. Melt 75g of the butter in a large saucepan. Add the apples and cook over low-medium heat until they are very soft and almost completely broken down (around 15 minutes). Set aside to cool.
  • Step 3
    Melt the remaining 125g of butter and dip each slice of bread into the butter, coating both sides. Cut each piece into thirds and line a 1ltr capacity pudding basin, overlapping the piece to create a seal.
  • Step 4
    Pour the apple mix into the pudding basin and finish off by placing more bread slices over the top. Place a plate over the top with something to weigh it down (like a small oven-proof casserole dish or pot) and bake in the oven.
  • Step 5
    After 30 minutes, remove the plate and the weight and continue cooking for a further 10 minutes or until the top is golden. Remove from the oven and allow to cool in the tin for around 10 minutes before inverting it onto a serving plate. Serve with custard or ice cream.
