It isn't Christmas unless there's a ham on the table! This apple Bourbon glazed ham recipe is perfect for Christmas Day lunches.
Ingredients
- 5kg ham (preferably skin on, pre-cooked)
- 1tsp whole cloves
- Traeger pork, poultry rub
- 2 large apples (cored and sliced thick)
- ¼ cup of Bourbon
- ¼ cup honey
- ¼ tsp of ground cinnamon
- ¼ tsp allspice
- ¼ tsp mustard (preferably dijon)
Method

Step 1Preheat Traeger at 165 Celsius (325f) for 15 mins.

Step 2Score ham in a diamond pattern, no more than 5mm apart.

Step 3Spread apple slices in a roasting pan.

Step 4Place ham on top of the apples and pour 1 cup of cider into the pan.

Step 5Roast on the grill for 90 mins.

Step 6In a small saucepan combine 3 cups of cider and bourbon over medium to high heat and bring to the boil. Simmer until reduced by a third, or until your liking.

Step 7Once reduced, whisk through the mustard, honey, cinnamon, cloves and nutmeg.

Step 8Using a brush glaze the ham until completely covered and continue to cook until internal temperature reaches 60 Celsius (140f). Ensure that you leave some glaze for serving.

Step 9Once reached internal temp as above remove ham and allow to rest for 30 mins before slicing.
Recipe Notes
Hot tip for placing ham in pan – line the roasting pan with foil for easier cleaning.
For glazing ham: Use either the Traeger probe and or a MEATER Made + wireless probe to keep track of your cook.
