Ingredients

  • 125 g unsalted butter
  • 1 tbs golden syrup
  • 2 tbs boiling water
  • 1 tbs bicarbonate of soda
  • 1 cup sugar
  • 1 cup plain flour
  • 1 cup rolled oats
  • 1 cup desiccated coconut

Method

  • Step 1
    Preheat oven to 150C.
  • Step 2
    Grease baking trays or line with baking paper.
  • Step 3
    Melt butter in a small pan.
  • Step 4
    Add the syrup, water and baking soda (it will froth up). Combine all dry ingredients in a mixing bowl, add the butter mixture and mix well.
  • Step 5
    Place spoonfuls of mixture on the prepared trays approximately 5cm apart, flattening slightly.
  • Step 6
    Bake for about 20 minutes until golden brown.
