Ingredients

  • 1 cup rolled oats
  • 1/3 cup desiccated coconut
  • 1/3 cup honey
  • 1/4 cup liquid coconut oil
  • 1 tsp vanilla extract
  • 1/2 cup coconut flakes toasted

Method

  • Step 1
    Process oats in a food processor until coarsely chopped.
  • Step 2
    Add the desiccated coconut, honey, coconut oil and vanilla extract. Pulse to combine.

  • Step 3
    Roll 1 tablespoon of mixture into a ball, then roll in the toasted coconut flakes. Transfer to a plate. Continue with the remaining mixture.
  • Step 4
    Place in the fridge for at least 1 hour to chill.
