Tiny finger food for little hands, these little muffins are scrumptious!
Ingredients
- 1/2 cup self-raising flour
- 1/3 cup brown sugar firmly packed
- 1/4 cup rolled oats
- 1/4 cup almond meal
- 1/4 tsp ground cinnamon
- 1 egg
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1/2 banana finely chopped ripe
Method

Step 1Preheat oven to 160C (fan-forced) and grease a 24-hole mini muffin pan.

Step 2Combine dry ingredients.

Step 3Mix together wet ingredients, except banana.

Step 4Pour milk mixture into dry ingredients and stir until just combined.

Step 5Fold in banana.

Step 6Place a tablespoonful of mixture into each hole in pan.

Step 7Bake for 15 minutes or until tops are a light golden colour.

Step 8Stand for 3 minutes before turning onto wire rack.

- 1 24-hole mini muffin pan
Recipe Notes
Almond meal is an excellent source of protein. For variation, I've also replaced banana with half of a finely diced Granny Smith apple and replaced milk with buttermilk.
