Ingredients

  • 150 g butter softened
  • 3/4 cup brown sugar firmly packed
  • 1 egg lightly beaten
  • 2 tsp vanilla extract
  • 1 cup plain flour
  • 1 tsp baking powder
  • 1 pinch salt
  • 2 cup rolled oats
  • 1 cup white chocolate broken into chunks
  • 2/3 cup dried cranberries

Method

  • Step 1
    Preheat oven to 180C and line 3 baking trays with baking paper.
  • Step 2
    Cream the butter and sugar together until pale and creamy. Add the egg and vanilla and beat until smooth.
  • Step 3
    Sift the flour, baking powder and salt together and stir until combined. Add the oats, chocolate and cranberries and stir to combine.
  • Step 4
    Roll tablespoons of the mixture and place on baking trays. Flatten the balls with a fork dipped in flour.
  • Step 5
    Bake for 12-15 minutes or until pale golden.
  • Step 6
    Remove from oven and cool on trays for 5 minutes before transferring to a wire rack to cool completely.

Recipe Notes
Use sweetened dried cranberries.
