Four simple ingredients are all that you need to make this delicious iced banana bread. Bake it in a fancy bundt tin to make it even more impressive!
Ingredients
- 400g tin condensed milk
- 3 large ripe bananas, mashed
- 375g cream cheese
- 2 cups self-raising flour
Method
-
Step 1Preheat oven to 180C. Grease a bundt tin, see notes for the best method.
-
Step 2Reserve 1/4 cup condensed milk, and place the remainder in a large bowl with the mashed bananas and 250g cream cheese. Whisk well to form a smooth mixture. Add flour and stir until just combined. Pour into prepared tin and bake for 35 minutes until a skewer inserted into the centre comes out clean.
-
Step 3Allow to cool slightly, then turn out onto an oven rack and allow to cool completely.
-
Step 4Make a quick icing by whisking together remaining 125g cream cheese with reserved condensed milk. Place cake on a serving plate and drizzle over the icing.
Recipe Notes
To ensure your cooked cake releases from the bundt tin without issue, rub plenty of butter on the inside using a scrunched-up piece of paper towel, ensuring you get into all the nooks and crannies. Next, add a spoon full of plain flour to the tin and shake it about until the entire surface is coated with a thin layer of flour. Turn the tin upside down over the sink and tap gently to remove any excess flour.
Make sure the bananas are extra ripe, and mash them well.
Be sure to bring the cream cheese to room temperature before you begin.
