Ingredients

  • 1kg piece boneless pork belly, skin scored
  • 1 tbsp garlic peri peri seasoning
  • 1 tsp salt flakes

Method

  • Step 1
Place pork belly skin-side down on a plate or board and rub peri peri seasoning all over the flesh. Turn skin-side up and use a paper towel to pat the skin very dry. Leave to marinate for at least 15 minutes.
  • Step 2
Sprinkle salt flakes over the skin. Place pork in basket of air fryer and cook at 180C for 20 minutes. Turn heat up to 200C and cook a further 20-25 minutes or until skin is very crispy.
  • Step 3
Use tongs to remove pork from air fryer. Place skin-side down on a chopping board and cut into thick slices, pressing firmly to cut through the crackling. Serve.
Recipe Notes

Notes:

  • I found a delicious range of seasonings in the spice section of the supermarket. Feel free to marinate the meat with any spice rub or seasoning mix, or make your own. Chinese five spice powder is delicious too.
  • My air fryer is quite small so I used a small piece of pork belly. You could do a bigger piece if it fits, or work in batches. Increase the cooking time if your piece of pork is quite thick.
