15-minute fried rice

Ingredients

  • 4 eggs, whisked
  • 30g butter
  • 2 cobs of corn
  • Handful spring onion, chopped
  • 2 cups bacon, diced
  • 2x 250g packet microwave rice
  • 2 tbs fish sauce
  • 3 tbs soy sauce

Method

  • Step 1
    On a hot pan add a little olive oil and add whisked eggs. Make sure the pan is covered with the egg and once bottom side down is cooked, flip over and cook the other.
  • Step 2
    Take egg out of pan and set aside.
  • Step 3
    Place butter, corn and spring onion into pan to brown and soften. After a minute add bacon.
  • Step 4
    While bacon is cooking cook rice as per packet instructions.
  • Step 5
    Pour rice and egg (chopped) into fry pan and give a stir to mix all ingredients together.
  • Step 6
    Add sauces and stir again.
  • Step 7
    Serve warm.

  • Large fry pan or wok
Recipe Notes

If you want to try something different - fill some lettuce cups with the rice also for a little added freshness.
