Quick and easy slice. Any vegetables you have on hand can be used. I have even used canned and frozen vegetables. A good way to clear the crisper.
Ingredients
- 3 cups mixed vegetables grated
- 1 cup cheese
- 3/4 cup milk
- 1/2 cup self-raising flour
- 2 bacon rashers
- 4 eggs
Method

Step 1Beat eggs and milk together. Add vegetables, cheese and flour and mix well.

Step 2Place in a well greased lamington tin or baking dish.

Step 3Sprinkle over bacon (or ham) and some pepper.

Step 4Bake at 200C for 30-35 minutes or until set and golden brown.

Step 5Serve hot or cold.
Recipe Notes
I have made this with left over roast vegetables e.g. asparagus, zucchini, eggplant, pumpkin, potato, capsicum and carrot. Just cut into bite size pieces.
