Ingredients

  • 750g zucchini
  • 1 tsp salt
  • 8 eggs
  • 1 1/2 cups self-raising flour
  • 1/3 cup olive oil
  • 1 brown onion, diced
  • 1 clove garlic, crushed
  • 300g bacon, diced
  • 1/4 cup parsley, chopped
  • 1 cup grated tasty cheese
  • 1/2 cup grated parmesan

Method

  • Step 1
    Preheat oven to 180C. Lightly grease a large, deep baking dish (I used a 23cm x 32cm tin).
  • Step 2
    Grate zucchini and place in a colander over a large bowl or basin. Sprinkle over salt. Leave for 10 minutes and allow excess liquid to drain off.
  • Step 3
    In a large mixing bowl, whisk together eggs, flour and oil. Add onion, garlic, bacon, parsley, tasty cheese and zucchini. Season well with pepper. Mix well. Pour into prepared dish, spread out into an even layer. Sprinkle over parmesan. Bake for 35-40 minutes until golden brown and set. Allow to cool slightly, then cut into squares to serve.
Recipe Notes

You can use any herbs you like, or omit them entirely. Dill or chives would be delicious.

There’s no need to salt and drain the zucchini, but the finished slice is much firmer if you do.

Omit the bacon for a vegetarian version!
