Turkey rissoles - sure to impress!
Ingredients
- 2 slices bread
- 500 g turkey mince
- 1/2 onion grated
- 2 garlic cloves crushed
- 2 tbs coriander finely chopped
- 2 tbs lemongrass stalk finely chopped
- 1 ginger fresh grated peeled
- 1 1/2 tbs hoisin sauce
- 1 tbs fish sauce
- 1 egg
- 1 splash oil for frying
Method

Step 1Soak bread in water, squeeze out moisture and crumble into a mixing bowl.

Step 2Add mince, onion, garlic, coriander, lemon grass, ginger, sauces and egg.

Step 3Using hands, mix thoroughly.

Step 4Shape into 8 rissoles approximately 10 cm in diameter and 1 cm thick. Refrigerate for 30 minutes.

Step 5Heat oil in a large frying pan over moderate heat. Fry rissoles rissoles for 2 to 3 minutes each side or until cooked but still quite moist.

Step 6Drain and serve.

Recipe Notes
Opt for a 4cm piece of ginger. I use the bottom 3-4cm of a lemon grass stem, or look for jars of chopped lemon grass in the spices aisle plus add finely diced fresh hot chilli for extra flavour. Chicken or pork also goes well with this recipe and cooking oil for shallow frying.
