A delicious meal packed with vegetables. We make it with pumpkin soup as our youngest can't eat too many tomato products.
Ingredients
- 500 g turkey mince
- 410 g canned diced tomato
- 420 g canned pumpkin soup
- 2 carrots diced
- 1 zucchini diced
- 1/4 jap pumpkin
- 1 tsp dried basil leaves
- 1 tsp dried coriander dried
- 1 tsp dried oregano
- 3 garlic cloves
- 50 g frozen spinach
- 1 packet lasagne sheets fresh
White sauce
- 2 tbs butter
- 1/4 cup plain flour
- 2 cups low fat milk
- 1 cup cheese
Method

Step 1Preheat oven to 180C.

Step 2Cook mince with garlic and dried herbs until mince is just cooked.

Step 3Add tomatoes and pumpkin soup and stir.

Step 4Add vegetables and cook until pumpkin is just starting to soften. Let sit while making white sauce.

Step 5In a separate pot, melt butter on high heat.

Step 6Add flour and stir for 1 minute.

Step 7Add milk and stir until thickened.

Step 8Add cheese and stir until melted.

Step 9In an oven proof dish, layer the lasagne sheets, meat sauce and white sauce, ending with white sauce.

Step 10Sprinkle with cheese and bake for 30-45 minutes.
Recipe Notes
We also sprinkle with feta and Parmesan cheese. Use low-fat cheese.
