Ingredients

  • 2 cups macaroni
  • 4 short-cut bacon rashers chopped fat trimmed
  • 2 tsp oil
  • 1 onion chopped
  • 2 tbs plain flour
  • 420 g canned cream of chicken soup
  • 1/2 cup light milk
  • 1 1/4 cups light tasty cheese
  • 100 g baby spinach

Method

  • Step 1
    Preheat oven to 180C (160C fan forced). Cook pasta in boiling water for 7 minutes or until al dente. Drain and return to pan.
  • Step 2
    Heat a large non-stick frying pan over moderate heat. Add bacon and cook, stirring, until crisp. Remove to a plate.
  • Step 3
    Add oil to pan and heat. Cook onion, stirring, for 3 minutes or until soft.
  • Step 4
    Stir in flour until blended; cook and stir for 1 minute.
  • Step 5
    Add combined soup and milk to pan; stir until mixture boils and thickens. Add ¾ cup of the cheese, stirring until melted.
  • Step 6
    Stir sauce, spinach and bacon into pasta.
  • Step 7
    Spoon mixture into a 6 cup baking dish. Sprinkle with remaining cheese. Bake for 20-25 minutes or until golden.
