This the best macaroni cheese ever.
Ingredients
- 2 cups macaroni
- 4 short-cut bacon rashers chopped fat trimmed
- 2 tsp oil
- 1 onion chopped
- 2 tbs plain flour
- 420 g canned cream of chicken soup
- 1/2 cup light milk
- 1 1/4 cups light tasty cheese
- 100 g baby spinach
Method

Step 1Preheat oven to 180C (160C fan forced). Cook pasta in boiling water for 7 minutes or until al dente. Drain and return to pan.

Step 2Heat a large non-stick frying pan over moderate heat. Add bacon and cook, stirring, until crisp. Remove to a plate.

Step 3Add oil to pan and heat. Cook onion, stirring, for 3 minutes or until soft.

Step 4Stir in flour until blended; cook and stir for 1 minute.

Step 5Add combined soup and milk to pan; stir until mixture boils and thickens. Add ¾ cup of the cheese, stirring until melted.

Step 6Stir sauce, spinach and bacon into pasta.

Step 7Spoon mixture into a 6 cup baking dish. Sprinkle with remaining cheese. Bake for 20-25 minutes or until golden.
