Cool off with this fresh and vibrant salad, served with a zesty basil sugar.
Ingredients
- 4 Lady Finger bananas sliced
- 1 pineapple chopped peeled small
- 2 mangoes chopped peeled
- 300 g cherries pitted
- 2 peaches chopped
- 1 cup purple grapes sliced
- 250 g fresh strawberries halved hulled
- 2 kiwifruit chopped peeled
- 1/2 cup pistachio kernels roughly chopped toasted
- 1 cup fresh basil leaves small *optional *to garnish
- 1 cup thick Greek yoghurt *to serve
Basil sugar
- 1/4 cup white sugar
- 6 fresh basil leaves large
Method

Step 1Basil sugar: Place sugar and basil in a small food processor. Process until finely chopped. Transfer to a jar and refrigerate until needed.

Step 2Fruit salad: Combine all the fruit in a large bowl. Spoon over two-thirds of the basil sugar and stir gently to coat.

Step 3Sprinkle over the pistachio then remaining basil sugar. Scatter over the small basil leaves if using and serve with yoghurt.
Recipe Notes
Basil sugar will keep up to 3 weeks in the fridge in an airtight jar.
