Ingredients

  • 2 1/2 cups plain flour
  • 1 tsp ground cinnamon
  • 1 cup butter
  • 1/4 cup sugar
  • 2 tbs water
  • 2 tbs ground cinnamon to coat
  • 1 cup sugar to coat

Method

  • Step 1
    In a mixing bowl, place flour and cinnamon. Whisk together until blended. Set aside.
  • Step 2
    In the bowl of an electric mixer fitted with the paddle, beat butter and sugar on medium-high speed until blended and fluffy.
  • Step 3
    Add 2 tablespoons water, beat until combined. Add flour mixture and blend on medium low until completely blended.
  • Step 4
    Press dough into 2 equal discs. Place each disc between 2 sheets of wax paper.
  • Step 5
    Use a rolling pin to roll out each disc to 3 mm thick. Slide onto a baking sheet. Chill for about 30 minutes until firm.
  • Step 6
    Preheat oven to 150C.
  • Step 7
    Place one rolled dough disc on the work surface and use a cookie cutter to cut into desired shapes.
  • Step 8
    Bake for 10-12 minutes until firm. Transfer to cooling racks to cool completely.
  • Step 9
    Roll cookies in combined sugar and cinnamon and serve.

  • 1 baking tray
