These cookies are great for the lunch box.
Ingredients
- 2 1/2 cups plain flour
- 1 tsp ground cinnamon
- 1 cup butter
- 1/4 cup sugar
- 2 tbs water
- 2 tbs ground cinnamon to coat
- 1 cup sugar to coat
Method

Step 1In a mixing bowl, place flour and cinnamon. Whisk together until blended. Set aside.

Step 2In the bowl of an electric mixer fitted with the paddle, beat butter and sugar on medium-high speed until blended and fluffy.

Step 3Add 2 tablespoons water, beat until combined. Add flour mixture and blend on medium low until completely blended.

Step 4Press dough into 2 equal discs. Place each disc between 2 sheets of wax paper.

Step 5Use a rolling pin to roll out each disc to 3 mm thick. Slide onto a baking sheet. Chill for about 30 minutes until firm.

Step 6Preheat oven to 150C.

Step 7Place one rolled dough disc on the work surface and use a cookie cutter to cut into desired shapes.

Step 8Bake for 10-12 minutes until firm. Transfer to cooling racks to cool completely.

Step 9Roll cookies in combined sugar and cinnamon and serve.
