These delicious vanilla slices are a breeze to make. Simply whip up a creamy vanilla custard mixture, then encase it in frozen puff pastry and bake in your pie maker.

Ingredients

  • 1 cup caster sugar
  • 1/2 cup custard powder
  • 1/3 cup Woolworths Essentials Cornflour
  • 3 cups milk
  • 1 tsp vanilla essence
  • 4 sheets frozen puff pastry, defrosted
  • Icing sugar, to serve

Method

  • Step 1
    In a medium saucepan, whisk together sugar, custard powder and cornflour. Whisk in milk and vanilla. Stir over low heat until mixture thickens. Remove to a bowl and allow to cool.

  • Step 2
    Preheat pie maker according to manufacturer’s instructions. Use pastry cutter to cut 8 bases and 8 tops (make the tops slightly smaller than the base) from the puff pastry.
  • Step 3
    Line pie maker plates with larger circles. Fill with 1/3 of a cup of the custard. Top with smaller pastry.
  • Step 4
    Cook for 8 minutes until golden. Repeat with remaining ingredients.
  • Step 5
    Allow to cool. Dust with icing sugar and serve.

Store in an airtight container in the fridge. You can enjoy them cold or reheat in the oven or microwave for a delicious dessert.
