Very easy and delicious, excellent for a cold winters day snack!
Ingredients
- 2 potatoes large
- 200 g sour cream
- 1 spring onion finely chopped
- 100 g cheese grated
- 1 seasoning
Method

Step 1Microwave potatoes for 3 minutes each on high.

Step 2Cut potatoes in half and scoop out the middle with a spoon, leaving a thin layer inside.

Step 3Mix the scooped potato, sour cream, spring onion and 50 g of the cheese in a bowl.

Step 4Spoon the mixture back into the potatoes and sprinkle the rest of the cheese on top.

Step 5Place under the grill until golden brown.
