These delicious baked gingerbread doughnuts are perfect for the festive season! They take just 10 minutes to prepare and 15 minutes to cook, so you'll have enough time to pop the kettle on and invite your neighbour over for afternoon tea.
Ingredients
- 225g self-raising flour
- 1 1/2 tsp ground ginger
- 1 tsp ground mixed spice
- 1 egg
- 90g honey
- 3/4 cup milk, at room temperature
- 90g melted butter
- 1 tsp vanilla extract
Icing
- 1 cup icing sugar
- 1/4 cup smooth Biscoff spread, melted
- 2 tbsp warm milk
- 1 tbsp butter, melted

Step 1Preheat oven to 200C/180C fan forced. Grease a 12-hole mini doughnut tray.

Step 2Sieve flour, ginger and mixed spice into a large bowl. Whisk the egg and honey in a jug. Add milk, butter and vanilla, whisking to combine. Pour into flour and mix until a thick batter forms. Leave to sit for 10 minutes. Spoon into prepared tray and bake for 15-17 minutes or until an inserted skewer comes out clean. Turn onto a wire rack to cool.

Step 3For the icing, combine ingredients in a bowl. Spoon over doughnuts and leave to set. Decorate with golden star sprinkles, if desired.
