A very easy, creamy, chicken dish with loads of flavour. This recipe is loved by all my family members and was my late husband's favourite.
Ingredients
- 500g chicken breast fillets cut into strips
- 1 tbs oil
- 1 cup coconut milk
- 2 tbs crunchy peanut butter
- 2 tbs sweet chilli sauce
- 2 chicken stock cubes
- 1 red capsicum small
- 1 cup snow peas
Method

Step 1Fry chicken strips in oil until golden.

Step 2Mix together coconut milk, peanut butter, chilli sauce and chicken stock. Pour over chicken.

Step 3Add snow peas or broccoli and red pepper.

Step 4Cook for approximately 5 minutes. Do not overcook.

Step 5Serve with plain boiled rice.

- 1 frying pan
Recipe Notes
You can use chicken stock cubes or powder.
You can also use broccoli instead of snow peas if you like.
