A late afternoon snack - a tea time delight. Can be eaten with ice-cream – one or two scoops of ice-cream served over 2 or three fritters for one serve. - mariabenzier

Ingredients

  • 5 bananas mashed medium ripe
  • 2 cups plain flour
  • 1 tbs water
  • 2 tbs sugar
  • 1/2 cup oil
  • 1 pinch salt

Method

  • Step 1
    In a mixing bowl combine mashed bananas, flour, baking powder, water (add only if mixture is too thick), sugar, salt.
  • Step 2
    Line a large plate or bowl with paper towel.
  • Step 3
    Heat oil in a frying pan.
  • Step 4
    Pour tablespoons of mixture gently into hot oil, continue to add more of the mixture making sure each tablespoon of mixture is separated from the others.
  • Step 5
    Fry until golden brown, remove from oil and add the next round of mixture.
  • Step 6
    Place fritters in the lined plate or bowl.
Recipe Notes

If you have over-ripe bananas and don't know what to do with them, this dish is a good suggestion.
