Ingredients

  • 100 g short-cut bacon rashers finely chopped rindless
  • 1 tsp extra virgin olive oil
  • 2 eggs
  • 1 tbs parmesan finely grated
  • 250 g wholemeal spaghetti
  • 2 tsp parmesan *to serve *extra
  • 1 tbs parsley finely chopped fresh
  • 1 pinch black pepper ground *to taste

Method

  • Step 1
    In a medium frypan, heat olive oil over medium-high heat and fry the bacon until crisp.
  • Step 2
    In a small bowl, whisk together the eggs, parmesan and black pepper, then set aside.
  • Step 3
    Meanwhile, cook the spaghetti according to packet instructions. Once cooked, drain immediately and place the spaghetti back into the pot, but turn off the heat - this is important or you will scramble the eggs.

  • Step 4
    Working quickly, pour in the egg mixture and the bacon, and toss until well combined and the egg has gently cooked into a creamy consistency.
  • Step 5
    Toss with parsley and serve hot with extra parmesan.
