Craving comfort food, but trying to avoid an avalanche of calories? Thanks to former Aussie Bachelor, Sam Wood - you can have your spaghetti and eat it too!
Ingredients
- 100 g short-cut bacon rashers finely chopped rindless
- 1 tsp extra virgin olive oil
- 2 eggs
- 1 tbs parmesan finely grated
- 250 g wholemeal spaghetti
- 2 tsp parmesan *to serve *extra
- 1 tbs parsley finely chopped fresh
- 1 pinch black pepper ground *to taste
Method

Step 1In a medium frypan, heat olive oil over medium-high heat and fry the bacon until crisp.

Step 2In a small bowl, whisk together the eggs, parmesan and black pepper, then set aside.

Step 3Meanwhile, cook the spaghetti according to packet instructions. Once cooked, drain immediately and place the spaghetti back into the pot, but turn off the heat - this is important or you will scramble the eggs.

Step 4Working quickly, pour in the egg mixture and the bacon, and toss until well combined and the egg has gently cooked into a creamy consistency.

Step 5Toss with parsley and serve hot with extra parmesan.
