Ingredients

  • 50g butter
  • 1/3 cup brown sugar
  • 3 pears firm medium peeled sliced
  • 150g butter
  • 1 cup brown sugar lightly packed
  • 3 eggs
  • 1 1/3 cups self-raising flour
  • 1 tsp baking powder
  • 2 tsp ground ginger optional

Method

  • Step 1
    Preheat oven to 180C or 160C fan forced. Line the base of a 22cm spring form cake pan with baking paper.
  • Step 2
    Melt 50g butter and 1/3 cup brown sugar together and pour over the baking paper. Cover with sliced pears in a circular pattern.
  • Step 3
    Beat together butter and sugar until pale and creamy.
  • Step 4
    Add eggs, one at a time, beating well after each addition. Stir in the combined flour, baking powder and ginger.

  • Step 5
    Spoon the cake batter over the pears. Bake for 40 minutes until a skewer inserted comes out clean.
  • Step 6
    Leave to rest for 5 minutes and then invert onto a serving plate.
  • Step 7
    Serve with custard, whipped cream or caramel sauce.
