A very moist, delicious cake or dessert.
Ingredients
- 50g butter
- 1/3 cup brown sugar
- 3 pears firm medium peeled sliced
- 150g butter
- 1 cup brown sugar lightly packed
- 3 eggs
- 1 1/3 cups self-raising flour
- 1 tsp baking powder
- 2 tsp ground ginger optional
Method

Step 1Preheat oven to 180C or 160C fan forced. Line the base of a 22cm spring form cake pan with baking paper.

Step 2Melt 50g butter and 1/3 cup brown sugar together and pour over the baking paper. Cover with sliced pears in a circular pattern.

Step 3Beat together butter and sugar until pale and creamy.

Step 4Add eggs, one at a time, beating well after each addition. Stir in the combined flour, baking powder and ginger.

Step 5Spoon the cake batter over the pears. Bake for 40 minutes until a skewer inserted comes out clean.

Step 6Leave to rest for 5 minutes and then invert onto a serving plate.

Step 7Serve with custard, whipped cream or caramel sauce.
