This simple no-bake fruit and custard tart is the perfect solution if you've been asked to bring dessert. Just four basic ingredients and it's ready in 15 minutes.
Ingredients
- 250 g milk arrowroot biscuits crushed
- 150 g butter melted
- 150 g pudding mix
- 750 ml milk
- 250 g fresh strawberries
- 2 passionfruit pulp
Method
-
Step 1In a large bowl mix together the crushed biscuits and melted butter until it forms a wet, crumbly cookie dough consistency. You should be able to ball it together in your fist without it breaking apart.
-
Step 2Press the biscuit base mix into a fluted tart tin with removable base. Use the base of a glass to press the mixture into the sides of the tin.
-
Step 3Put the base into the fridge while you make the custard.
-
Step 4Pour the milk into a large bowl, then sprinkle the pudding mix over, whisking briskly and continuously until the pudding mix starts to set.
-
Step 5Pour the custard into the tin and put it in the fridge to set for about 15 minutes.
-
Step 6Hull and halve the strawberries and spread them over the top of the tart. Drizzle with passionfruit pulp.
Recipe Notes
Use whatever fruit is in season to decorate the tart.
Make sure you reduce the milk quantity on the pudding packet by one third so that you'll get a thicker custard filling.
A loose bottomed tart tin is a must with this recipe, as the base can be quite crumbly.
