These sweet little treats are a joy to make and a joy to share. Pastry on the outside and a dollop of raspberry jam on the inside, finished off with a sweet coconut topping – if the reviews are anything to go by, I’d be making a double batch, if I were you, as they disappear quickly.
How to make coconut tarts: key tips
When kneading the dough, only do so until the mixture comes together and is smooth enough to roll out. If you overwork your dough, your pastry will be tough and dense, rather than light and crumbly. You’ll need a 7cm round cutter to cut out the rounds to line the patty pan holes.
Though the jam is a lovely touch, don’t pile it into your lined patty pans, as it will just ooze out as the tarts cook. About 1 tsp should be enough.
To make the coconut topping, cream the butter and sugar using electric beaters, then fold in the coconut and flour. You may need to add a little water so that the mixture is a soft dropping consistency. In other words, it falls off your spoon when the spoon is gently shaken. But be careful, as you don’t want it too sloppy.
Cook your little tarts until they are gold and the tops are firm to the touch.

Ingredients
- 125 g plain flour
- 1 pinch salt
- 60 g butter
- 1 tsp caster sugar small
- 1 egg yolks
- 1/2 cup water
Filling
- 1 cup raspberry jam
- 60 g margarine
- 60 g caster sugar
- 1 egg beaten
- 60 g desiccated coconut
- 30 g self-raising flour sifted
Method

Step 1Preheat oven to 190C. Prepare 16-18 patty tins.

Step 2Sift the plain flour and salt in a bowl. Rub in butter lightly and stir in sugar; add the egg yolk and enough water to mix to a firm dough. Turn onto floured board and knead lightly. Roll out, cut large rounds and line patty tins. Put a little jam in each.

Step 3Cream the margarine and the sugar together and beat in the egg a little at a time. Fold in the coconut and self-raising flour and add a little water if necessary, to give a soft dropping consistency.

Step 4Place spoonfuls in the lined patty tins and bake for 15-20 minutes until golden and firm to the touch.

Can I use other jam in these coconut tarts?
You can use any jam you like. A berry jam, such as blackberry or strawberry, or a fruit jam, such as apricot or blueberry would be delicious. You could even make a few of each!
Can I make these coconut tarts in a mini muffin pan?
You sure can. If you don’t have patty pans, mini muffin pans will do nicely. Your tarts just won’t have as rounded a base.
