These delicious little banana cupcakes come to your party table dressed as Despicable Me's minions. If they weren't so yummy, they'd be too cute to eat.
Ingredients
- 1 1/2 cups self-raising flour
- 3/4 cup sugar
- 1/4 tsp salt
- 125 g butter melted
- 1 1/2 cups banana
- 2 eggs
- 1 bowl buttercream icing
- 1 tube black writing icing
- 18 marshmallows
- 18 Mars M&Ms
- 1 licorice strap
Method

Step 1Preheat the oven to 180˚C. Line a 12 hole muffin tin with blue patty cake wrappers.

Step 2In a medium bowl whisk together the flour, sugar and salt.

Step 3Make a well in the centre of the flour and add the melted butter, mashed banana, eggs and vanilla. Mix with a spoon until combined.

Step 4Spoon batter into muffin tin, dividing it evenly between the 12 patty cases.

Step 5Bake at 180˚C for 25 - 30 minutes, or until a toothpick inserted into the centre of a cupcake comes out clean. Cool completely on a wire rack.

Step 6Spread the top of each cupcake with yellow buttercream icing. Add the marshmallows as eyeballs. Use the black writing gel to stick two brown M&M's to the marshmallows as pupils.

Step 7Cut thin strips from the liquorice strap and add them to the tops of the cupcakes as the minion's goggle straps.
Recipe Notes
You can buy a container of yellow buttercream icing and a tube of black writing gel in the baking aisle at Spotlight.
Use brown M&M's
Make sure you get some blue patty cake wrappers to complete your Minion look.
You could also use slices of banana for the minion eyes if you wanted a healthier alternative.
