Ingredients

  • 90 g plain flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 egg
  • 20 g butter melted
  • 3 tbs milk
  • 1 tsp Tabasco
  • 2 tbs corn cob kernels
  • 100 ml vegetable oil
  • 1 tbs Sweet chilli sauce *to serve

Method

  • Step 1
    Place flour, baking powder, egg, butter and salt in a bowl and stir together.
  • Step 2
    Add milk and Tabasco to form a thick batter and stir in the corn.
  • Step 3
    Heat the oil in a large fry pan and add teaspoon size dollops of the batter.
  • Step 4
    Fry each side until golden brown.
  • Step 5
    Drain on kitchen paper towel and serve warm with sweet chilli sauce.

  • 1 frying pan
Recipe Notes
I've also made this with chopped chillies and capsicum, and with chopped ham and onion with a tablespoon of grated cheese.
