These are just wonderful with salad as a light lunch or to have with a roast.
Ingredients
- 90 g plain flour
- 1 tsp baking powder
- 1 tsp salt
- 1 egg
- 20 g butter melted
- 3 tbs milk
- 1 tsp Tabasco
- 2 tbs corn cob kernels
- 100 ml vegetable oil
- 1 tbs Sweet chilli sauce *to serve
Method

Step 1Place flour, baking powder, egg, butter and salt in a bowl and stir together.

Step 2Add milk and Tabasco to form a thick batter and stir in the corn.

Step 3Heat the oil in a large fry pan and add teaspoon size dollops of the batter.

Step 4Fry each side until golden brown.

Step 5Drain on kitchen paper towel and serve warm with sweet chilli sauce.

I've also made this with chopped chillies and capsicum, and with chopped ham and onion with a tablespoon of grated cheese.
