A very different, but very yummy tiramisu.
Ingredients
- 4 egg whites
- 24 Savoiardi sponge finger biscuits
- 1 punnet fresh strawberries
Lemon syrup
- 1 1/2 cups water
- 1/4 cup sugar
- 3/4 cup lemon juice
- 1/2 cup limoncello
Lemon mascarpone cream
- 500 g mascarpone
- 4 egg yolks
- 4 tbs caster sugar
- 1 tsp vanilla extract
- 2 lemons zested
Method

Step 1Combine lemon syrup ingredients in a shallow dish.

Step 2Beat egg whites until soft peaks form.

Step 3Blend together lemon mascarpone cream ingredients. Gently fold egg white into the cheese mixture.

Step 4Dip biscuits into syrup mix to coat and lay in dish.

Step 5Cover with half the mascarpone mixture and slices of fresh strawberries.

Step 6Repeat layers and finish by topping with fruit slices.

Step 7Leave in fridge for at least four hours or overnight.
Recipe Notes
As it has raw egg (though the lemon juice and Limoncello likely 'cook' the egg) to be on the safe-side, don't serve to anyone who may be pregnant, and make sure it's not left out of the fridge for any length of time.
