This boozy, adults-only Italian dessert will be the star of the show.
Ingredients
- 6 eggs
- 6 tbs caster sugar
- 500 g mascarpone
- 2 cups espresso coffee (liquid)
- 20 Savoiardi sponge finger biscuits
- 100 ml Kahlua
- 100 g dark chocolate
Method

Step 1Separate the egg yolks from the whites.

Step 2Cream the yolks with sugar until pale in colour.

Step 3Mix through the mascarpone with a spoon, add half the Kahlua then set aside.

Step 4Beat egg whites until stiff peaks form, then fold into the mascarpone mixture.

Step 5Spread a layer of mascarpone mixture over the base of a rectangular baking dish or lasagna dish.

Step 6Dip the Savoiardi biscuits one at a time in a bowl of cooled espresso coffee (can dilute with water) and the rest of the liqueur, taking care not to make them soggy.

Step 7Place the biscuits side by side on the layer of mascarpone, then spread another layer of mascarpone across the biscuits.

Step 8Repeat the process twice, finishing with a layer of mascarpone on top.

Step 9Grate chocolate over the top and set aside for two hours before serving.
Recipe Notes
Use Kahlua, Tia Maria or Frangelico.
