Ingredients

  • 1 tbs oil
  • 1 brown onion finely chopped
  • 2 garlic cloves crushed
  • 1 tbs ground cumin
  • 1 tbs ground coriander
  • 2 tsp cayenne pepper optional
  • 1/2 tsp ground cinnamon
  • 2 jalapeno chillis finely chopped
  • 420 g brown canned lentils drained rinsed
  • 420 g red canned kidney beans drained rinsed
  • 425 g canned diced tomato
  • 3 tbs tomato paste

Method

  • Step 1
    Heat the oil in a pan and cook the onion, garlic and chilli until softened.

  • Step 2
    Add the spices and cook for a further minute or two.
  • Step 3
    Add the beans, lentils, tomatoes and tomato paste.
  • Step 4
    Simmer for 15-20 minutes or until the sauce thickens. Season with salt and pepper.
  • Step 5
    Serve with rice or tortillas as desired.
Recipe Notes

For kids or anyone else who doesn't like heat, it's a good idea to omit the chillies and reduce the amount of cayenne pepper.
