A lentil-based chilli con carne that is best served with rice or tortillas. Even the carnivores will be hard pressed to guess that there's no meat in there.
Ingredients
- 1 tbs oil
- 1 brown onion finely chopped
- 2 garlic cloves crushed
- 1 tbs ground cumin
- 1 tbs ground coriander
- 2 tsp cayenne pepper optional
- 1/2 tsp ground cinnamon
- 2 jalapeno chillis finely chopped
- 420 g brown canned lentils drained rinsed
- 420 g red canned kidney beans drained rinsed
- 425 g canned diced tomato
- 3 tbs tomato paste
Method

Step 1Heat the oil in a pan and cook the onion, garlic and chilli until softened.

Step 2Add the spices and cook for a further minute or two.

Step 3Add the beans, lentils, tomatoes and tomato paste.

Step 4Simmer for 15-20 minutes or until the sauce thickens. Season with salt and pepper.

Step 5Serve with rice or tortillas as desired.
Recipe Notes
For kids or anyone else who doesn't like heat, it's a good idea to omit the chillies and reduce the amount of cayenne pepper.
