Super tasty fruit and nut muffins that are perfect for everyone. These muffins are a delicious snack for all ages and a great way to get the extra fruit into fussy young eaters!
Ingredients
- 1 1/2 cups wholemeal self-raising flour
- 1/2 cup brown sugar
- 1 1/2 tbs mixed spice
- 1/4 cup linseeds *optional
- A handful sunflower seeds *optional
- A handful almonds *optional
- 3 eggs lightly beaten
- 4 tbs olive oil
- 2 cups pear chopped
- 3/4 cup mixed nuts chopped
- 1/4 cup sunflower seeds optional
- 1 tsp ground cinnamon
Method

Step 1Preheat oven to 180C.

Step 2Sift flour, sugar and spice into mixing bowl

Step 3Add nuts, seeds and pears, eggs and oil. Mix all together.

Step 4Spoon into muffin 12 large muffin pans or 24 small muffin pans

Step 5Bake at 180C for approximately 15 minutes or until browned.

Step 6Rest for 5 minutes, then transfer to cooling rack and dust with cinnamon.
Recipe Notes
I use walnuts and almonds. I also modify them for school lunches and remove the nuts and LSA (linseed, sunflower and almond mix) but keep the seeds for minerals and fibre content.
