Ingredients

  • 6 frozen sweet tart cases
  • 160 ml sweetened condensed milk
  • 2 tbs fresh lemon juice
  • 2 egg whites
  • 70 g caster sugar

Method

  • Step 1
    Preheat oven to 200C and place the tart cases on a baking tray.
  • Step 2
    Bake for 10 minutes or until brown.
  • Step 3
    Meanwhile, combine the condensed milk and lemon juice in a bowl.
  • Step 4
    Use an electric beater to whisk the egg whites in a clean, dry bowl until firm peaks form.
  • Step 5
    Gradually add the sugar and continue beating until the sugar dissolves.
  • Step 6
    Spoon the lemon mixture evenly among the tart cases.
  • Step 7
    Top with meringue mixture and bake in oven for 2-3 minutes or until lightly browned. Serve immediately.

Recipe Notes
You can buy the tart cases in the freezer section of shop. I usually use Pampas.
