Lemon meringue tarts without the fuss.
Ingredients
- 6 frozen sweet tart cases
- 160 ml sweetened condensed milk
- 2 tbs fresh lemon juice
- 2 egg whites
- 70 g caster sugar
Method

Step 1Preheat oven to 200C and place the tart cases on a baking tray.

Step 2Bake for 10 minutes or until brown.

Step 3Meanwhile, combine the condensed milk and lemon juice in a bowl.

Step 4Use an electric beater to whisk the egg whites in a clean, dry bowl until firm peaks form.

Step 5Gradually add the sugar and continue beating until the sugar dissolves.

Step 6Spoon the lemon mixture evenly among the tart cases.

Step 7Top with meringue mixture and bake in oven for 2-3 minutes or until lightly browned. Serve immediately.
