Rated almost 5 stars by our members, this Asian inspired fried rice is super-easy to make, is quick to throw together and is budget friendly. Our recipe starts with cooking a simple omelette to add to the rice once cooked. We also use frozen peas and corn, but you can use any other frozen vegetables you have in the freezer. This fried rice recipe is easily adaptable, with our members creating their own versions and adding ingredients like garlic, ginger, bbq chicken and prawns for additional flavour and nutrients. Ingredients

  • 1 1/2 cups basmati rice
  • 1 tbs peanut oil
  • 2 eggs lightly beaten
  • 5 spring onions sliced
  • 6 bacon rashers chopped
  • 1 carrot diced
  • 2 cups frozen peas and corn
  • 2 tbs soy sauce

Method

  • Step 1
    Heat 1 teaspoon of the oil in a wok.
  • Step 2
    Cook the egg until just cooked, turning half way.
  • Step 3
    Remove omelette from the wok and set aside. Slice into small pieces.
  • Step 4
    Boil the rice in salted water for about 10 minutes, until just tender.

    While the rice is cooking, heat the rest of the oil in the wok and cook the spring onions for about two minutes.
  • Step 6
    Add the bacon and cook for several minutes until crisp.
  • Step 7
    Add the vegetables and cook for a further few minutes.

    Add the soy sauce.
  • Step 9
    Add the cooked rice and sliced omelette and stir until hot.
