Ingredients
- 1 1/2 cups basmati rice
- 1 tbs peanut oil
- 2 eggs lightly beaten
- 5 spring onions sliced
- 6 bacon rashers chopped
- 1 carrot diced
- 2 cups frozen peas and corn
- 2 tbs soy sauce
Method

Step 1Heat 1 teaspoon of the oil in a wok.

Step 2Cook the egg until just cooked, turning half way.

Step 3Remove omelette from the wok and set aside. Slice into small pieces.

Step 4Boil the rice in salted water for about 10 minutes, until just tender.

Step 5While the rice is cooking, heat the rest of the oil in the wok and cook the spring onions for about two minutes.

Step 6Add the bacon and cook for several minutes until crisp.

Step 7Add the vegetables and cook for a further few minutes.

Step 8Add the soy sauce.

Step 9Add the cooked rice and sliced omelette and stir until hot.
