The cook says: “This recipe is so easy, I just throw all the ingredients in a bowl. I don't even sift the flour and it works perfectly every time!” Reminiscent of the coconut ice of our childhoods, this slice is cakey and coconutty on the base and has a sweet pink icing on top. This is what slice dreams are made of! 

How to make an easy coconut slice: key tips

Put all the dry ingredients (like the cook said, there’s no need to sift) and the butter in a bowl and stir them all together. Next, add the wet ingredients and give it another good stir. Spread it all into a slice pan, smooth the surface, and bake until golden on top and a skewer inserted into the slice comes out clean.

While the base is cooking, make the icing. Start by only pouring half the boiling water into the mixture and stirring until smooth. Then gradually add a little more until you reach the desired consistency. The icing should be quite thick.

Key ingredients in this easy coconut slice recipe

Self-raising flour helps to create your cakey base. It can easily be swapped for gluten-free self-raising flour, if required.

Desiccated coconut gives the base a beautiful texture, while adding sweetness at the same time. It also provides a pretty snowy topping.

Pink food colouring gives this slice its ‘coconut ice’ vibe, but feel free to tint your icing any colour you wish.

Ingredients

  • 1 cup self-raising flour
  • 3/4 Woolworths Essentials Caster Sugar
  • 1 cup coconut
  • 125g butter melted
  • 1/2 cup milk
  • 2 eggs
  • 1 tsp vanilla extract

Icing

  • 1 1/3 cups icing sugar
  • 1 tbs butter
  • 2 tbs boiling water
  • 1 drop pink liquid food colouring
  • 1/2 cup coconut *to decorate

Method

  • Step 1
    Put flour, salt, sugar, coconut and melted butter in a bowl. Mix well.

    Stir in beaten eggs, milk and vanilla.
  • Step 3
    Spread mixture into a greased slice tray and bake at 180C for 25-30 minutes.
  • Step 4
    Icing: Place icing sugar and butter in a bowl.
  • Step 5
    Pour in enough boiling water to make a thick paste.
  • Step 6
    Add a drop of food colouring and sprinkle with coconut.

Is it easier to ice this slice when it’s hot or cooled?

I find it’s much easier to ice your slice while it is still warm in the pan, as the icing will melt just a little and spread much more easily over the soft crumb. Then you simply sprinkle over the coconut and let the slice cool completely. Once the slice has cooled, you can lift it out of the pan and cut it into pieces.

Should I line the slice pan for this easy coconut slice?

I always find it a good idea to grease my slice pan and then line it with baking paper so that it overhangs the 2 long sides. A whole slab of slice can sometimes be difficult to get out of the pan, especially if the crumb is quite soft or it sticks to the sides. However, with a baking paper lining, you can simply lift the slice straight out using the overhanging paper as handles.
