Ingredients
- 3 cups dried breadcrumbs
- 1 onion diced small
- 12 sage leaves finely chopped fresh
- 3 bacon rashers chopped
- 1 tbs parsley chopped
- 1 tomato finely chopped firm medium
- 1 tbs butter
- 1 pinch salt and pepper optional *to taste
Method

Step 1Lightly saute onion and bacon in pan until onion is transparent.

Step 2Combine all ingredients.

Step 3Breadcrumbs should be just moist, so that ingredients just cling together.

Step 4Stuff turkey or chicken.
Recipe Notes
What's the secret to the best stuffing recipe?
You might be surprised, but it's important to make sure your breadcrumbs are stale. I like to put the end crust of the bread over the stuffing and tuck the ends inside the turkey instead of using skewers. Another tip is to make sure you don't use overripe tomato as it will make the stuffing soggy. You can use dried mixed herbs too. Butter is best to use, and you need enough to help ingredients cling together.
Of course, you can use this recipe to stuff chicken, too.
