Quick and Easy Curried Sausages

One for the kids! Sweet instead of spicy. I created this one for our childcare centre and 30 out of 36 went back for more. I call that a winner. - Bettybird

Ingredients

  • 1kg sausage thin
  • 400g corn relish
  • 50g chicken noodle instant soup
  • 2 cups water
  • 1 tbs curry powder
  • 1 large carrot, grated
  • 1 large zucchini, grated
  • 1 onion diced
  • 1 garlic clove crushed
  • 2 tbs tomato sauce
  • 2 tbs olive oil

Method

  • Step 1
    Grill sausages until browned and slice into 1 cm rounds.
  • Step 2
    While sausages are cooking mix relish, packet soup, water, curry powder and tomato sauce together in a bowl until well combined, set aside.
  • Step 3
    Heat oil in a large pan and lightly fry onion, garlic, carrot and zucchini for 2 minutes. Add sausage pieces and stir through.

    Add relish mixture to pan and combine well.
  • Step 5
    Simmer for 10-15 minutes, until sauce thickens.
Recipe Notes

This dish is best served to children on a bed of mashed potato, but is also great with boiled rice or plain old bread and butter.

If you prefer a creamy curry add a can of evaporated milk at simmer stage. I have also made this dish for my family using a BBQ chicken.
