Tasty, healthy and quick.
Ingredients
- 300 g spaghetti
- 200 g chicken breast fillet diced
- 100 g sun-dried tomato in oil diced
- 4 tbs pesto
- 1 tbs pine nuts
- 1/2 bunch baby spinach chopped
- 30 g parmesan shaved
Method

Step 1Cook the spaghetti as per the packet instructions.

Step 2In the meantime place the chicken and 1 tablespoon of pesto in a non-stick frying pan and cook till golden.

Step 3Once the spaghetti is cooked, strain and add it to the chicken in the frying pan with the sun dried tomatoes, pine nuts and another 3 tablespoons of pesto. Stir through till all ingredients are mixed in.

Step 4Serve with shaved parmesan and spinach leaves on top.
