Chicken Pesto Pasta

Ingredients

  • 300 g spaghetti
  • 200 g chicken breast fillet diced
  • 100 g sun-dried tomato in oil diced
  • 4 tbs pesto
  • 1 tbs pine nuts
  • 1/2 bunch baby spinach chopped
  • 30 g parmesan shaved

Method

  • Step 1
    Cook the spaghetti as per the packet instructions.
  • Step 2
    In the meantime place the chicken and 1 tablespoon of pesto in a non-stick frying pan and cook till golden.
  • Step 3
    Once the spaghetti is cooked, strain and add it to the chicken in the frying pan with the sun dried tomatoes, pine nuts and another 3 tablespoons of pesto. Stir through till all ingredients are mixed in.
  • Step 4
    Serve with shaved parmesan and spinach leaves on top.

I use basil pesto in this recipe.
