A deliciously simple dish, the sweet flavours of the pineapple work wonderfully with the fiery spices of the Madras. This is a quick, easy and tasty weekday meal, and a great (more spicy) alternative to a sweet and sour.
Ingredients
- 450 g chicken pieces diced
- 1/2 onion sliced
- 1 green chilli cut into pieces
- 225 g canned pineapple chopped drained
- 500 g Patak's chicken madras curry sauce
- 1 tbs vegetable oil
Method

Step 1Heat oil in a pan, add onions and cook for 3 minutes.

Step 2Add chicken and green peppers and cook for 4 minutes.

Step 3Pour over the Patak’s Madras simmer sauce, cover and leave to cook through for 10 minutes.

Step 4Add pineapple to the Madras, reserving a few pieces for garnish. Stir well and cook for a further 5 minutes.

Step 5Serve with rice.
