Chicken Madras with Pineapple

A deliciously simple dish, the sweet flavours of the pineapple work wonderfully with the fiery spices of the Madras. This is a quick, easy and tasty weekday meal, and a great (more spicy) alternative to a sweet and sour. - Patak's

Ingredients

  • 450 g chicken pieces diced
  • 1/2 onion sliced
  • 1 green chilli cut into pieces
  • 225 g canned pineapple chopped drained
  • 500 g Patak's chicken madras curry sauce
  • 1 tbs vegetable oil

Method

  • Step 1
    Heat oil in a pan, add onions and cook for 3 minutes.
  • Step 2
    Add chicken and green peppers and cook for 4 minutes.
  • Step 3
    Pour over the Patak’s Madras simmer sauce, cover and leave to cook through for 10 minutes.
  • Step 4
    Add pineapple to the Madras, reserving a few pieces for garnish. Stir well and cook for a further 5 minutes.
  • Step 5
    Serve with rice.
