Apricot and Sausage Meatloaf

This is a budget meal for all the family but a delicious and flavourful loaf at the same time. It is baked in an oven bag and can be served hot or cold. - maggie1945

Ingredients

Loaf

  • 8 dried apricots chopped
  • 1/2 cup boiling water
  • 4 slices bread stale
  • 1 egg
  • 1/4 cup orange juice
  • 1/2 tsp orange rind grated *optional
  • 500 g sausage meat
  • 40 g cream of chicken soup packet
  • 1 onion finely chopped

Sauce

  • 1 tbs tomato sauce
  • 1 tbs sweet chilli sauce
  • 1 tbs Worcestershire sauce

Method

  • Step 1
    Pour the boiling water over the apricots in a bowl and leave to stand.
  • Step 2
    Combine the 3 sauces ingredients in a medium sized oven bag. Stand the bag up right in a loaf tin or a suitable baking dish.
  • Step 3
    Drain water from apricots, add the bread including the crusts, egg and the orange juice. Mash the bread with a fork to soften it.
  • Step 4
    Add the sausage meat, chicken soup mix and onion. Mix all ingredients together thoroughly using hands. Form mixture into a big egg shape and place into the bottom of the oven bag with sauce. Rotate in bag so all the surfaces are coated with the sauce mix.

    Reshape loaf if necessary, then stand the bag upright in the baking tin, with the top folded over loosely several times.
  • Step 6
    Bake at 150C for 45 minutes then open the bag so the top of the loaf will dry. Bake for 15 minutes longer.
  • Step 7
    Allow to stand in the bag for 5-10 minutes before lifting onto a board for slicing.
Recipe Notes

If serving cold, serve with a lovely, green salad or broccoli or rice salad.
